Moussaka: Sarah’s Recipe Cards

Moussaka [a favorite of mine, even as a child from my mom’s recipe card files.) Typed below the images to the best of my ability 😀

4 Med. sized eggplants
1 1/2 lbs ground beef
3 T minced onion
1/3 lb bread, in soft crumbs
1 pt white sauce with 2 egg yolks
grated cheese
Small amt of oil

Slice and peel eggplant 1/2 in thick, sprinkle with salt. Put on lg plate, weigh down with heavy plate or ?. Let rest one hour. Dry on paper towels. Brown in oil and reserve. Brown beef, cool slightly. Add bread crumbs
(with beef, add onions, salt and pepper]
Layer egg pl.. layer meat, repeat.
pour sauce over and cut thru
sprinkle a little dry crumbs over and add cheese.
bake 30 min 350 remove – let sit 10 minutes. cut in squares and serve
